Stir Fry

So once again I've been quiet...my poor Nanna has been in the hospital for Three weeks now :-( We have no idea how much longer she's going to be in there. I have been living of takeaway for most of these three weeks, which has hurt my bank balance and my weight lool! 

So to get back on track we had this lovely stir fry tonight! Most of the ingredients came from Aldi, so much more cost effective compared to Tesco's and alike. 

So here's just some of the ingredients:
In this pan is White Cabbage, Carrots, Celery and Spring Greens all thrown in the food processor to make it quicker and easier for me! 





So I didn't take many pictures during the making because it was so quick! Was ready in less than 10mins! 

Here is the half-eaten end result:

Overall a great work night dinner for future me thinks! Sorry this is short! Catch you guys soon!!!

Alpro Hazelnut Milk

How have I not tried this before!!!


Bar far the best i have tasted on my cereal so far!!

Morning Juice

So just made a quick juice for breakfast before heading out to work! 


Ingredients:
1 Celery Stalk
1 Small Apple
2 Cups of Spinach
1 Small/Medium Cucumber

Directions:
Put ingredients into the juicer one by one

(I ended up adding a a tiny squirt of agarve nectar just to sweeten it slightly but taste before adding this)

This juice is full of Potassium, Calcium and Iron. I may possibly make this again tomorrow with some added Ginger! 

Going to attempt getting through my week coffee-less! Eek! Wish me luck

I'm backkkkk and a juice recipe for you!

So we had a lovely time in sunny Tunisia (although I did get severely sunburnt. Damn you pale complexion!) Anywhoo eating was a little bit up and down and I did falter a few times but I'm not guna beat myself up about it. I'm back now I concentrating extra hard to get onto the right path. 

I put on 1kg whilst away not impressed but the way I was eating it defo could of been worse. 

So I've been back since late Wednesday night but only just now (Saturday morning) starting to feel human again. Felt like a zombie the last few days and my eating must of contributed to that. 

So here's my "getting back on track juice" 😊



Ingredients:
2 Apples
1 Small handful of Kale
2 Large Lettuce leaves
2 Stalks of Celery
1/2 Medium Cucumber

Directions:
1) Wash all the ingredients
2) Core Apple but do not peel (I didn't core as I'm lazy)
3) Cut Celery in half
4) Roll Kale and Lettuce into balls and run through the juicer with the Apple or Celery. 
5) Juice the Cucumber last
6) Pour into a glass and enjoy!

I amended the recipe slightly as it called for 3 Celery sticks but I thought this would be too much and I'm glad I did. I also ended up adding a 2nd Apple as the recipe only called for 1 and I couldn't really drink it.

So I'm off on holiday....

Literally writing this on my way to the airport. I'm so excited we have been planning this for 18mths! We are off to sunny Tunisia yay! 

Tots excited hahaha although my son looks more like he's yawning haha 


Anywho, I already checked with the hotel and there is plenty of unlimited fresh fruit, veggies and alike so I should be full!!

Lentil, tomato and potato soup

So I found this recipe on "ohsheglows" for a Lentil, Tomato and Kale soup. (Original recipe here: Oh She Glows ) 
I decided to make it tonight for dinner although I made a few tweaks to the ingredients. 

Below are Angela's ingredients:

Ingredients:
  • 1 tsp coconut oil (or other oil)
  • 2 large garlic cloves, minced
  • 1 sweet onion, diced
  • 3 celery stalks, diced
  • 1 bay leaf
  • 1 & 1/4 tsp ground cumin
  • 2 tsp chili powder
  • 1/2 tsp ground coriander
  • 1/4-1/2 tsp smoked sweet paprika, to taste
  • 1/8th tsp cayenne pepper, or to taste
  • 14-oz can diced tomatoes
  • 5-6 cups vegetable broth, more if desired
  • 1 cup red lentils, rinsed and drained
  • fine grain sea salt and pepper, to taste
  • 2 handfuls torn kale leaves or spinach

To this I added:

1 large carrot
4 salad potatoes
2 handfuls of spring greens (in place of Kale as I'm not keen on it) 

It came out delicious although mine came out more stew like than soup like lol. It was very filling and I thoroughly enjoyed it.

Dinner!

So! I barely ate all day (again tut tut). I am sooooo disorganised which I am learning fast that is not the way to be when living this lifestyle. So today I finally ate at 9pm!! Again NOT COOL. So I decided to put a little bit of everything in. Asparagus, tender stem broccoli, salad potatoes and carrots all to go with my pasta. I had already put 100g of the pasta to boil thinking I was just having that with a bit of sauce and decided to add the veg to the steamer after. I definately did not take into consideration that;
1) my plates are just the normal size 
2) my eyes are bigger than my belly and 
3) that I could actually manage all that food. 

So here's my dinner:


As you can see I had to use a plate and I bowl (lol how greedy do I look!) 

Here's how the calories look:


Note to self: you do not like asparagus on its own! Especially steamed (eww) next time cook in with the sauce!!

Anywhoo I ended up leaving half the asparagus and half the pasta so the calories I actually consumed looked a little more like this:




What a difference all that pasta makes eh! Glad I don't eat it that often. Also next time would not have the pasta AND potatoes lol. Hunger can make you just want everything lol. 

Anywhoo moral of the story is PLAN! I should try to remember this lol.

Struggling with ideas

So whilst I am sticking with my vegan choices 10days on I am struggling with ideas for dinners. So tonight I have this...


Unfortunately this delish looking burgers are NOT vegan friendly. They came from Tesco's meat free section. They're called "Green Thai Vegetable Bakes". When I brought them my phone was dead so couldn't google or use my app. I brought them in the hope that I would be okay as most places sent to mention if an item is vegetarian but not if it is vegan. I believe from the ingredients list that it is the sauce "patty" that makes it non-vegan (it has palm oil in) so I left that part out and discarded it. So I think the part I did consume was vegan. Won't be making that mistake again though. I had this with salad made up of bell peppers, cucumber, lettuce, spinach, sweetcorn, shredded carrots, spring onions, cherry tomato and avocado. Sounds loads but I chopped it all up and put it in a large box with a drizzle of lemon juice and some coriander. This will last me a good few days. 

Whilst the bowl doesn't look that fillin I actually struggled to finish. What do you guys love to eat???

Loving veggies

This was my dinner tonight. Doesn't look like much but I was full! I felt really tired tonight. Lots of running round today (very little food tut tut) so feeling very drained. Couldn't be bothered to cook if I'm honest. Just put these on the steamer and wallah! Lol better luck over the weekend I hope.

Enjoying lunches

I must say I am now a week in and I am still feeling really positive about this big change. I am glad I have come to this decision (although now wish I had done it sooner!!) Here is an example of my lunches....today's:


A nice beet root salad with celery sticks and hummus! 

Got some snacks too...



I do intend on making these at home in future hit was rushing out the door today so it didn't happen! 

I have also invested in a Brita Fill 'n' Go. 


It was reduced in Robert Dyas for £9.99 (normally £14.99). It comes with 4 filter disks which is a months worth. They also have packs of 8 for £9.99 (normally £14.99)

Here's to positive changes!!!

Vegan Starbucks frapp!

So this is a quick recipe for the Mocha Cookie Crumble Frappachino that Starbucks in UK only sell in the summer. Doing it the vegan way doesn't taste exactly like it because you have to leave out the chocolate sauce and squirty cream on top 😔 but it still tastes pretty darn good. Remember to experiment to make this to your tastes. 

Here is a list of ingredients needed:

12-15 ice cubes (this varies depending on the thickness you would like..experiment) 
1tsp Coffee Grannules (make a shot)
2-3tbls of drinking chocolate (my app says this is vegan)
200mls of alternative milk (I use Almond unsweeted normally) 
Around 1tbls of vegan chocolate chips (I don't have any so I left these out this time) 



Directions:

1. Place the ice and the "milk" into the blender jug

2. Add the drinking chocolate and the coffee shot (and the chips if you have them) 

3. Blend until all mixed together. I tend to do a high pulse for 20secs then pulse it as needed.

4. Pour into your favourite cup and enjoy!!

Remember to check your blenders manual to check maximum frozen ingredients allowed to avoid burning out the motor.

Welcome to my blog

Hey! My name is Lucy. I am 27 and reside in London, UK. I have a (nearly) 9yr old son. He is my world for obvious reasons :) This is us:

I work 4days a week whilst studying Accountancy. This is a real struggle sometimes but needs must. I have had a blog or two before but never really took them anywhere so I'm not actually sure where to even start. I will try to post at least a couple times a week, updates, recipes, further info etc.

After much deliberation I have decided to attempt to follow a vegan diet. I will be the first to admit this is mainly for health reasons, things such as Cancer scare the hell out of me, my nan is currently in remission from Non-Hodgkin Lymphoma. I see first hand the struggle she went through. I am hoping that by adopting this kind of lifestyle I can start to reverse the affects from the all the junk I have shoved into my body. Admittedly I am not a big eater of red meats, I tend to stick to mainly chicken and fish. Well I did. My partner already only eats a fish based diet, and is always going on about how the government is trying to poison us with our meats etc. Up until recently I just brushed his comments off. Not that I have dared to inform him of this yet haha will only give him cause to gloat!
I had noticed a documentary on Netflix called “Vegucated” I recommend this be one of the many video’s you look into watching if you’re considering going down the vegan lifestyle. It had me in tears!!! It makes for some very disturbing viewing in parts, BUT some eye opening information. I know this is only the begining but I am looking forward to a healthier new me!!!
